In our approach to sourcing and green buying, we prioritize hyper-local, single-producer, single-varietal lots of outstanding quality and uniqueness of flavor profile, whose intentional cultivation, and careful processing at the hands of their producers yield beautifully clean cups with high flavor differentiation, transparency, and traceability to a given lot’s varietal and terroir. It is imperative to us, too, that the producers we work with be compensated fairly for the high degree of skill and labor required on their part to produce the degree of quality of the lots we purchase. Our approach to roasting, then, follows directly from our approach to sourcing; we calibrate each of our offerings individually to highlight refined sweetness, complex acidity, and delicate tea-like body, and accomplish this by roasting in our own minimal, Nordic-style: just to development and not a moment longer. Our priority at Mirra is always to allow the innate flavors of each offering full and open expression in the cup, in perfectly-orchestrated balance, without the negative interference of overly-involved processing methods and over-developed roasting styles.
