What first struck us was the unquestionable blue raspberry note we get on this one, especially as it cools. There is also a really beautiful, subtle orange blossom florality to this coffee, all of which is rounded out by a dark, sweet and slightly spiced red cherry cola note. If you’re a fan of Panamanian geisha, but are looking for something a bit more unusual in terms of profile, this one’s for you.

The farm, Finca Cafe de Eleta was first founded in 1978 by Fernando Eleta, who initially intended to use it primarily to grow vegetables and to raise sheep. In 1995, however, Fernando decided to transform the farm into a coffee plantation, and inaugurated this transformation with the planting of a grove of catuai trees. Finca Cafe de Eleta is located at 1.500 masl in the Chiriqui region of Panama, and has grown to a pretty large size for a coffee farm in Panama, measuring 204 hectares. Diego Eleta, who is the current manager of the farm, cultivates a number of varieties besides geisha, including bourbon, typica, catuai, caturra, maragogipe, and pacamara.

Geisha is one of the most prized varieties of coffee due to its absolutely exceptional potential for quality, and particularly intense, even perfumed florality, sweetness, and clarity of flavor. Geisha is an Ethiopian heirloom variety, having been first identified in the 1930s in the forests of Gori Gesha. The variety first attracted global attention in 2005, when the Peterson family of Hacienda La Esmeralda in Boquete, Panama entered a lot of geisha grown on their estate into the Best of Panama competition, and won. Ever since, geisha has come to enjoy the status of the most lauded variety of coffee in commercial cultivation, and is heavily represented among winning lots in Cup of Excellence competitions annually.

All coffee is sold whole-bean to reduce oxidation, and increase the longevity of volatile organic compounds.

Cost per 250mL serving - $1.56

For the third year in a row, we are amazed by the quality of the work that Leon Christianakis is doing at Acacia Hills, and we couldn’t be happier to welcome two of his lots back onto our menu this season. This one, his washed pacamara, is as bright as ever, and yields oodles of jammy raspberry, candied lime citric acidity, and the round sweetness of ripe tropical soursop.

Leon Christianakis is the third generation of his family to grow coffee in Tanzania, his ancestors having immigrated from Greece in the early 20th century, with the intention of making a living in coffee production. The land they initially cultivated was not suitable, however, to growing specialty-grade coffee due to its low altitude; consequently, in the early 2000s, Leon began searching for lands at higher altitude that would be more suitable to the cultivation of coffee of exceptional quality. In 2007, Leon, in partnership with Mark Stell, purchased the land on Mount Oldeani that would become Acacia Hills, and planted trees whose varietals have high quality potential at altitude, namely, kent, SL28, pacamara, and geisha.

Pacamara was first created in 1958 by the Salvadoran Institute for Coffee Research by crossing the pacas and maragogipe varieties. Pacas, then, is a natural mutation of the bourbon variety, and maragogipe is a natural mutation of the typica variety. Pacamara is lauded within the industry for its overall quality and complexity of flavor, typically possessing a medium body and an abundance of citrus, berry, stone fruit, and floral flavor notes.

All coffee is sold whole-bean to reduce oxidation, and increase the longevity of volatile organic compounds.

Cost per 250mL serving - $1.62

We are certainly glad to present this lovely washed Mexican coffee, our first of the season, from producer Jesus Santos, from the San Pedro el Alto community in Oaxaca.
