This is our first time offering a lot from producer Wilmer Gallardo Paz—a member of the widely-lauded Finca Inmaculada’s Fellows cooperative program—and we couldn’t be more impressed by the quality of this rare natural striped bourbon varietal lot. While super clean and crisp, as is our standard, this coffee offers up an abundance of round, juicy red and pink fruit in the cup in the form of jammy raspberry, and light, floral cotton candy, all of which is topped by a zing of bright kiwi acidity.

Finca Inmaculada launched their Fellows program in 2022 with the goal of cooperating with a highly selective group of talented and intentional producers in the areas surrounding Finca Inmaculada by sharing their own expertise in cultivation and processing with producers selected to participate in the program; Wilmer Gallardo Paz is a member of this program, growing coffee on his farm, Finca Gallardito in Huila, Colombia under the supervision of Finca Inmaculada.

Little is yet known about the striped bourbon varietal, beyond its being a natural mutation of pink bourbon. This mutation has been noticed with increasing frequency over the last decade in Colombia, where producers have found, among groves of pink bourbon, certain trees producing cherries with faint orange striping on them. Pink bourbon is a relatively uncommon varietal, first identified relatively recently, in 2013, and grown almost exclusively in Colombia. Pink bourbon is known for its potential for quality, generally represented by pleasant, citric acidity, honeyed sweetness, and strong floral presence in the cup — all qualities present in this offering. Its genetic heritage remains uncertain, although it is most likely not actually bourbon at all, but rather the descendant of an Ethiopian landrace varietal. This would certainly make sense, given that the flavor of pink bourbon is much more akin to a washed Ethiopian landrace or Panamanian geisha in its florality, than a more typical Colombian bourbon or castillo.
