We’ve been keeping an eye out for a super tasty, unique washed maragogipe for a good while now, and it has proven to be a real challenge, to say the least. When this very lot from Augustin Ccoyo of Finca Progresso, Peru, landed on our table, we knew we had finally found both our first beautiful washed maragogipe, as well as the perfect coffee to collaborate on with our good friends at Secret Coffee, BK. Expect a rich, viscous, syruppy experience with this one, starting out with strong black cherry vibes, creamy milk chocolate, and the sweet juiciness of ripe apricot.
Located at 2.050 masl in the Cusco region of Peru, Augustin and his wife have been coffee producers their entire lives, and their farm, Finca Progreso, has been handed down, generation to generation in their family. Given the high altitude and mildly tropical climate, Augustin is able to achieve a high degree of consistency in the quality of his crop, year to year. He also adds that highly selective harvesting and slower, shade drying are the keys to quality on his farm. Finca Progresso is a small operation, consisting of only 4 hectares of cultivated land.
Maragogipe is a natural mutation of typica, most known for being the largest variety in production, in terms of bean size. It was first discovered in 1870 in the Maragogipe municipality of Bahia, Brazil. Now, it is also the parent variety of several others, including pacamara, maracaturra, and marageisha. Because of its small yields, and high susceptibility to pests and diseases, it has never been cultivated at any great scale commercially, which is why it remains a relatively rare variety. Despite this, it does remain in production at a select number of smaller, more quality-driven farms throughout Latin America, due to its unique profile and potential for quality.
